I am a working mom to 2 sweet but very busy kids. Emelia has homework EVERY night and Luke well he is 2 so that says it all. Cooking is something I enjoy but I would rather do it on a weekend when I feel like I have time, work weeks feel like I am cooking just to feed the family {I hate fast food although we are guilty every so often} I try to make meals that I can turn into something else....here is one I used this week and was LOVED by all :)
Green Chili and lime Chicken
I use 5 or 6 boneless chicken breast {more or less, depending on your family size}
1 small can of chicken broth
2 limes squeezed {if the lime feels hard put it in the microwave for 15-30 seconds}
2 bay leaves
1 cup salsa {I use pace...because although I am married to a Mexican,he likes it...go figure}
1 medium can of green chillies
1/2 can diced tomatoes {crush in your hand first to break them up a bit} I only use half because my family is not a fan,I however love them!
1 small onion chopped
3 cloves garlic crushed
salt and pepper
put it all in the crock pot on low for 4-6 hours.....take it out and shred it with a fork

The first night I threw this mix into tortillas {we buy the kind you cook up fresh...delish} and the kids loved it,my hubby said it was amazing as well!
The next day I made chicken tacos for lunch....fried up a few fresh tacos shells and put on all the fixings. Tacos are my happy place so this was amazing!
That night after work I threw the left over chicken in a big pot and made.....
Tortilla Soup
Chicken { used the left overs but when I make it normally I use 2 or 3 breast}
1 big box of chicken stock {just depends on how much soup you want}
1 large onion diced
1 can diced tomatoes
1 large can green chillies
1 can enchilada sauce { I use medium for a touch of heat,my 2 year still eats it so it's not too hot}
the juice of 2 limes
2 cloves of garlic
1 hand full of cilantro chopped {optional,but I love it}
salt and pepper to taste
Let it come to a boil, lower and simmer for 30 minutes
Cut 3 corn tortillas into strips and add to pot,let it cook for another 10-15 minutes.
Toppings my family love <3
Avocados
shredded cheese
sour cream
cilantro
all of them are awesome!! I served our soup with Turkey,Bacon and Avocado sandwiches.
It was out of this world,good!! Give it a try and if you do let me know what you think!!!
